Raw Rainbow Pad Thai

Rainbow Pad Thai ~ packed with Hemp protein!!! I have made this salad countless times over the last 5 years. It is a great large salad to take to picnics and share with others, I promise it won’t disappoint.

Recipe ~ • 1 medium zucchini, spiraled • 2 large carrots, julienned • 1 red pepper, thinly sliced • 1 cup thinly sliced red cabbage • 1 cup frozen edamame, thawed • 3 green onions, thinly sliced • 3 tbsp hemp seeds • 1 tsp sesame seeds.

SAUCE • 1 garlic clove • 1/4 cup sunflower seed butter • 2 tbsp fresh lime juice • 2 tbsp tamari • 2 tbsp water • 2 tbsp pure maple syrup • 1/2 tbsp toasted sesame oil • 1 tsp freshly grated ginger.

  1. Prepare all ingredients using a julienne peeler and or chopping finely and add to large bowl. 2. Prepare the dressing by processing all dressing ingredients in a blender. 3. Pour on dressing and enjoy!
