Heavenly sweet potato chocolate brownies.
• 1 medium sweet potato, grated finely (the finer the better!) • 1/2 cup cacao powder • 1/4 cup coconut oil • 1/4 cup maple syrup ( I make a double batch & still only use 1/4) • 2 tbsp almond meal • 6 drops Doterra wild orange • 2 tsp gluten free baking powder• 1 tsp quality salt.
Heat oven to 160’C. Combine all ingredients. Spread mixture into a baking tin – I like to use a bread tin lined with baking paper. Bake for approximately 35 minutes. Remove from the oven and let sit for 5 minutes.
Can be eaten straight away BUT leave over night in the fridge to set and it goes next level and becomes thick & dense, which I highly recommend!!!
Top with peanut butter, coconut ice cream, yogurt, whatever your heart desires & ENJOY X
